    HARVEST
    Grapes are picked by hand during the end of September depending on the grapes’ complete biological ripeness, whose evaluation is based on sugar degrees, pH, total sourness and polyphenolic potential. Grapes are pickedv by hand, respecting their wholeness and their organoleptic peculiarities that will come out with the wine.
    WINEMAKING
    La vinificazione avviene nel rispetto della tradizione applicando i moderni principi della vinificazione biologica in bianco. Dopo la selezione delle migliori uve, viene eseguita la diraspatura ed una breve macerazione pellicolare, cioè il contatto delle bucce con il mosto ad una T° di 15-18°C per 8-10 ore. Ciò favorisce l’estrazione frazionata dei componenti nobili aromatici delle bucce che determineranno la personalità del futuro vino. Successivamente viene eseguita una pressatura soffice ed il mosto fiore viene refrigerato ad una T° di 8-10°C e decantato per 10-12 ore. Il mosto limpido che si ottiene viene fermentato in barriques di rovere francese ad una T° di 20-23°C. A fine fermentazione alcolica viene favorita la fermentazione malo-lattica mediante inoculo dei batteri malolattici. Il vino rimane ad affinare nelle barriques sulle fecce fini per un periodo di 12 mesi fino al momento dell’imbottigliamento, durante tale periodo vengono eseguiti periodici “batonages”, ossia il rimescolamento delle fecce fini, che permettono una omogeneizzazione della massa e la corretta evoluzione organolettica del vino stesso. Al termine del periodo di affinamento il vino viene travasato ed imbottigliato. In tutte le fasi della vinificazione per garantire e tutelare la genuinità e la salubrità del prodotto vengono rispettate le regole previste dai disciplinari per la produzione dei vini biologici.

    Serve it at a temperature of about 10-12°C, uncork the bottle just before consumption
