    VINOSOPHIA

    Wines take form in the mind. I plan each wine, thinking first about the emotions that the drinker will feel and only then the production techniques required to create it. The journey is essentially back to front.

    To fully understand and follow Chiusa Grande’s “Vinosophia” - our “Philosophy of Wine” - we need to travel backwards through the emotions that wines can inspire and then choose the organoleptic characteristics that create them.

    How do we do this?

    By selecting the best vine and grape types, adopting specific wine production and aging techniques, then sharing with our clients the emotions we discovered while drinking the wine we produced.

    Excellent examples of this journey are the wines Perla Nera, Montepulciano d’Abruzzo DOC and Perla Bianca, Trebbiano D’Abruzzo DOC.

    Perla Nera represents passion and torment. It is a wine that is enthralling and melancholy at the same time. Aged 18 months in barrique, with its great personality it manifests strong fragrances linked to the metaphor of fleeting infatuation.

    At the opposite end we find Perla Bianca, symbol of pure and reciprocated love. This wine is aged 10-12 months in barrique and comes softly and well-balanced to the tastebuds to provide peace of mind to the drinker.

    Multisensory Wine Tasting

    An engaging wine tasting experience
    in which every sense is stimulated

    In our Multisensory Tasting Room smell, sight, taste, touch and hearing are stimulated at the same time during the Multisensory Wine Tasting.

    The Multisensory Tasting is a highly engaging experience designed to welcome our guests and let them indulge in the pleasure of the senses while tasting our wines. During this experience we will use different colours created by our LED RGB light system and listen to the “Vinosophia Collection”, an album of music composed by different artists (coordinated by musician Tony Pancella) that took inspiration from our wines.

      Il progetto denominato “Vinosophia” è un progetto di Ricerca Industriale e Sviluppo Sperimentale realizzato da Chiusa Grande in collaborazione con Made in Bio srl, Capofila del Progetto, e l’Università degli Studi G. D’Annunzio. Il Progetto è stato cofinanziato dal Ministero per lo sviluppo Economico attraverso il Fondo per la crescita sostenibile (FCS).

      Il progetto Vinosophia, concluso a dicembre 2023, ha avuto quale obiettivo la dimostrazione che una tecnica biologica di produzione vinicola innovativa in iper-ossigenazione con fermentazione malolattica e senza solfiti sia in grado di migliorare la qualità del vino prodotto. Conferma di tale miglioramento sono stati gli esiti clinici ottenuti mediante protocolli scientifici (valutazione dell’attività ossido-riduttiva e studio del reflusso gastroesofageo), le correlazioni con la percezione sensoriale e gustativa del vino da parte del consumatore e gli effetti sui processi psicologici (emotivi e cognitivi) e sui processi psicofisiologici relativi al sistema nervoso autonomo. La finalità del progetto è quella di realizzare un prodotto vitivinicolo che possa essere inserito tra gli alimenti funzionali, specifico per alcune tipologie di consumatori che non riescono a goderne appieno stante gli effetti collaterali che il consumo provoca (cefalee, rigurgito, etc.).
